I got some fresh rhubarb at the market the other day and made a platz...it is a Mennonite recipe. $2.95 pound. I have enough left over to make a rhubarb-buttermilk tea cake that I am going to try tonight. It does look very good. 1 1/2 cups flour 1 tsp. baking soda 1/4 tsp salt 1 egg 1 cup brown sugar 1/2 cup buttermilk 1/4 cup vegetable oil 1 tsp vanilla 2 cups chopped rhubarb 1/2 cup chopped pecans for glaze 1 cup sifted icing sugar 4-5 tsp lemon juice...............think I will skip this Preheat oven 350 spray with oil or use parchment paper 8 x 4 loaf pan stir flour with baking soad & salt in medium bowl. Wish egg with brown sugar, buttermilk, oil & vanilla in large bowl, then stir in flour mixture. Add rhubarb & pecans and stir just until combined. Scrape batter into pan. bake 70-75 min and cake tester comes out clean cool in pan for 10 min. at this time mis the glaze if using and drizzle over warm loaf. Buttermilk tea cake? I love buttermilk recipes. It gives a cake a bit of tang. I am going to try it out and give most of it away because I will be tempted to eat it all. |

Sounds wonderful agate. I love anything with rhubarb! Am on a no/low fat diet these days so I need a sub for veg oil. Hmm. Wonder if tofu might work? :-) Enjoy! |
