Last week I had a friend over for dinner and remembered just in time that he is lactose intolerant, so I couldn't make chicken paprikash. I had a real craving for it so made it for myself the next day, though I realised it isn't really the chicken I like, it's the sauce and spaetzle or noodles. What's your favourite way to prepare chicken? |

I will tell you how my mother did it. Catch the chicken in the back yard. Cut off its head and let the blood drain out. Then pluck all the feathers. Then singe it to get rid of all the small feathers or stubs left. The softer feathers were kept for stuffing pillows. Then clean out the gizzards and set aside all that nice stuff other than the intestines for later. Then stuffing it and roasting it in the wood fired oven. Later the gizzards were combined with rice for a side plate. Delicious. |
