Chicken n Stuffing Casserole: 2 boxes stove-top stuffing mix for chicken 6-8 skinless, boneless chicken breasts 1 tbsp (15 ml) canola or vegetable oil 1/4 tsp each salt & pepper 4 Swiss cheese slices 2 tbsp (30 ml) butter OR stick margarine, melted 10 oz (284 ml) can condensed cream of chicken soup (can also substitute condensed cream of celery soup) Prepare stuffing mix according to package directions. Transfer to greased 13 by 9 inch baking dish, 2 inches deep. In large skillet, brown chicken in oil. Sprinkle with salt & pepper; place over stuffing. Top with cheese. Drizzle with melted butter.Spoon soup over stuffing. Cover and bake at 350 F (180 C) for 40 minutes. Uncover and bake for 10-15 minutes longer, or until chicken juices run clear. |
