Chicken with artichokes!

1 cup of cherry tomatoes



1 can (14oz) artichoke hearts drained and quartered



2 cloves of garlic finely chopped



1 tablespoon of balsamic vinegar



2 tablespoon heart healthy butter spread. ( I use Becel margarine)



1/2 tsp of dried oregano



1/4 tsp of ground black pepper



1 lb. of boneless, skinless, chicken breasts



In a 13x9 pan, toss tomatoes, artichokes, garlic, vinegar and 1 tablespoon of of margarine, set aside.



In a small bowl blend remaining 1 tablespoon of margarine with oregano and pepper.



Arrange chicken on Tomato mixture and spread the above mixture on the breasts.



Bake at 350/375 for 30 minutes or until thoroughly cooked.
