I'm making minestrone for the first time in months. Tons of great produce in the shops and the weather is right for it.

Love brussel sprouts, will have to try the shallot method.

I just steam them and toss them in a little drained gently fried bacon (which I cut into very small pieces) also add a tiny bit of butter.

Just made them the other night with butter only.

But I sit there and pick all the nice small tender ones. I only need a couple of dozen.

I will try them with the shallots next time.

Right now someone gave me a Spaghetti Squash.

I don't know how to cook it and it seems a like a lot.

Anyway to freeze part of it?
