O.K. all you water bottle fans who want to separate eggs. Here's a recipe to try. I just made one and it was perfect. 1. Separate 4 egss. Beat whites till frothy, Add 2 tablespoons of water, 1/2 tsp of salt. Beat till stiff but not dry. Keep yolks in a separate bowl. Add 2 tablespoons flour, dash pepper to yolks. beat till thick and lemon-coloured. Fold into whites. 2. Heat 1 tablespoon butter, margarine, or cooking oil in a 10 inch skillet. When fat is just hot enought to make a drop of water sizzle, pour in omelet mixture. Level gently, leaving slightly higher around edge. 3. Cool over low heat till puffy and lightly browned on bottom, about 5 minutes. (Lift the edges to check browing) finish in 300 degree oven for 8 to 10 minutes. 4. Omelet is done when knife inserted in center comes out clean. Loosen. Make a cut at right angles to the handle, just above center. Fold. Makes 3 to 4 servings. I cut the recipe in half and it worked out well. Next time I am going to add green onions to the mix maybe even bacon bits.? |

Love omelets so will try this recipe using 2 eggs as 4 eggs would be too much for me. Try adding cheese, or mushrooms, many other variations. |

I made it again with 4 eggs for a friend who visits. We added crisp salami pieces. It was great. |

There was a huge thread and a video on separating the yolks from the whites using a plastic water bottle. You even inquired why we would want to separate the whites from the yolks. This recipe uses the whites separately from the yolks. I use a plastic egg separator that you can buy at a kitchen outlet. All you do is place the egg separator over a measuring cup and break the egg into it. The white separate out from the yolks. |

Made the fluffy omelet with two eggs last night. Add a little shredded cheese and some thyme. Was disappointed as I found the omelet too dry! If I try it again I would omit the flour from the yolks. |

I made one yesterday and omitted the flour. But only used two eggs instead of four for one person. It was nice and fluffy and not dry at all. That frypan is a Paula Dean. Best one I ever tried for non sticking. Picture attached. Edited by campy, Oct 9 2012, 10:30 AM.
