While this starts out with a can of Campbell's Tomato Soup, it was listed at the bottom of the Mayo Clinic Newsletter today. Made it at lunch, and liked it so much, I cannot wait until lunch tomorrow for the other bowl. I did not have fresh basil so checked and 1 tsp. of dried equals 1 tbsp. fresh. Dietitian's tip: Tomatoes are a good source of lycopene, an antioxidant that may help protect against cancer and cardiovascular disease. Lycopene is most plentiful in red tomatoes and is best absorbed when the tomatoes have been cooked. By Mayo Clinic staff Serves 2 Ingredients •1 can (10.5 ounces) condensed low-sodium, low-fat tomato soup •1 can (10.5 ounces) filled with fat-free milk •1 medium tomato, chopped •1 tablespoon chopped fresh basil or cilantro •2 tablespoons croutons •1 tablespoon freshly grated Parmesan cheese Directions In a saucepan, add the soup and milk. Whisk together until smooth. Warm over medium heat about 7 to 10 minutes, stirring frequently. Add in the chopped tomato and herbs. Cook an additional 5 minutes, stirring occasionally. Ladle even amounts into individual bowls and garnish each serving with 1 tablespoon croutons and 1 1/2 teaspoons Parmesan cheese. Serve immediately. P.S. I would order this again in a restaurant. Campbell's was founded in 1869 so Heat's MIL might have been enjoying their soup all her life. http://en.wikipedia.org/wiki/Campbell_Soup_Company I know in our household we ate it from the time we were kids with no ill effects. Just noticed on the tin it says 480 mg. We must remember salt is required to preserve foods when canning although I don't know if Durgan does???? Take care, Pat |

Darcie, They make a lower sodium variety of tomato soup, about half the salt (about 400 mg sodium,) called Healthy Request...alas, the charge MORE to put in less. Go figger! But they don't include tomato in their LOW SODIUM line which has a Cream of Mushroom with only 75 mg. sodium per serving...now THAT'S low sodium. I do wish that they'd all realize that it is not much effort or expense for us to add our OWN salt but taking it OUT can be difficult. 017 But perhaps there are preservative issues as well. I don't consider 480mg to be small, in view of the fact that I need to eat some solid food the rest of the day. Sodium doesn't only affect your BP but it is a culprit in Meunier's desease as well. You can find the content of sodium in all foods here. http://www.nutrition.gov/whats-food/salt-sodium Too bad NY doesn't have farmer's markets, I can go to many markets in Montreal and get fresh produce as a very reasonable price, no need to grow it myself. Bad, excuse I figure. Canned soups are pressure sealed, no need to add sodium for preservation. Oh they DO, all over. Trouble is these 'farmers" just go to the local grocery store and buy produce, let it sit around til it looks tawdry and then double the prices and sell it as "organic." And people with quarter million dollar salaries oooh and aaahhh over it. I swear I saw the same eggplant come and go back and forth to the "farm" for 2 weeks. I even named it Iggy. I guess having lived with as well as seen many others go through sodium excess problems this was just my cup of tea to get on the soap box :winkingdevil: It was fun. I get enough excess sodium when I go out for lunch, will try to maintain a semblance of healthy sodium intake at home. I will have to check the soup display to see if I can find this, I do look at it, I like the low sodium clam chowder, break down and have it a couple of times a year but it is certainly nowhere near this sodium content. I try to restrict my sodium intake to stuff I really like and tomato soup is not one of them though. Edited by Darcie, Oct 26 2012, 03:51 AM.
