Lentil Sausage Soup 1 tbsp (15ml) olive oil 1/2 lb (225g) chorizo or other sausages ( i use mild italian sausage) sliced thin 1 medium onion, chopped 2 garlic cloves, minced 8 cups (2L) chicken broth 2 cans, each 19 oz. (540ml) stewed tomatoes 2 cups (500 ml) diced, peeled butternut squash 1/2 cup (125 ml) small bow pasta 19 0z (540 ml) can lentils, rinsed and drained 8 cups (2L) lightly packed fresh baby spinach 2 green onions, chopped Directions: In large heavy pot, heat oil over medium heat. Add sausages and saute for 5 minutes, or until cooked. With slotted spoon, transfer sausages to bowl and drain off all but 1 tbsp fat from pot. Add onion, garlic to pot; saute for 3 minutes or until onion is tenderadding 1 tbsp (15ml) chicken broth, if onion is sticking. Add broth, stewed tomatoes, bring to a boil over medium-high heat. Add butternut squash and cook for five m inutes. Add pasta, cook for 5 minutes, or until pasta and squash are tender. Return sausages to soup, add lentils and spinach; cook for 1 to 2 minutes or until spinach is just wilted. Garnish each serving with green onions. Zoomer-di (Brenda) |

That sounds good. I like many kinds of bean soup with sausage added. I was about to append my yummy black bean soup, but remembered it is on my other computer. I have to sort out all this computer messs soon. nainai |
