Pilot bread was made using whole grain wheat flour,quinoa,poppy seed, pumpkin juice.Then kneaded and made into patties and cooked at 375F for thirty minutes, then flipped over and baked again for thirty minutes. It will keep at room temperature for long periods depending upon the moisture present.To soften for ingesting a minute in a microwave softens to about the texture of a commercial bagel.It may be softened by steaming or dipping in a liquid.

I have used spelt flour. I don't remember the sticking together qualities. The gluten in the wheat flour is the glue. I believe you are concerned about the gluten. I have used all the flours and prefer the wheat, particularly since I make my own flour now. Ground up cooked potatoes is another choice for the liquid portion.

Spelt is not completely gluten free.
