Anita's Rum Cake

This is simply the best rum cake we have ever had, and I know the "purists" are going to be upset, but the recipe really works.

Just make sure you grease the bundt pan really well, and that you remember to add the second dose of rum to the glaze AFTER it has boiled, and that you pour over the glaze as soon as the cake comes out of the oven. I have had more requests for this recipe than just about anything else I have ever made.


1 package of yellow cake mix and one small package of instant vanilla pudding
or
1 package of yellow cake mix that already has the pudding in it

4 eggs 1/2 cup water
1/2 cup salad oil 1/2 cup chopped pecans
1/2 cup rum

Mix all ingredients except chopped nuts for 2 minutes. Sprinkle the nuts on the bottom of a WELL GREASED Bundt pan. Pour in the batter and bake at 325 til done, approx 1 hour.

Remove from oven, but do NOT remove from pan. Pierce thoughroughly while cake it still very hot and pour glaze over what will become the bottom of the cake when it is removed from the pan.

Let cake cool completely before removing from the pan.

Glaze:
1 stick butter
1 cup sugar
1/4 cup water
Bring to boil , then remove from heat and stir in one ounce of dark rum

So funny that you would mention this recipe,BJ., I have to make a Whiskey cake for my grandson to take to the lab. It is the same recipe except made with whiskey instead of rum..oh, and it also calls for 1 cup of milk. Everyone loves this at his lab....I made the mistake of senidng one several years ago and it is now a Christmas tradition.

Right about now I would love to run away and feast on all the cakes, also we have to have rum and whiskey and kahlua to drink.

Really don't feel like driving for 7/8 hours.
