Menu suggestions?

For Chistmas eve, it will be just the three of us and I am planning a small beef tenderlon with a mushroom port sauce and a salad, but I need another side dish or two and Gabe is lactose intolerant which leaves out veggies with any cream or cheese sauce, or scalloped potatoes, etc. Since we are having mashed potatoes the next day, not sure what to serve.

The sauce is really good and should have something to go with it besides the beef.

Suggestions?

There's nothing wrong with mashed potatoes several meals in a row IMO but some people like rice - though I vote for the potatoes. You could have roasted ones.

I did this for the first time on thanksgiving and it was a surprise hit. I don’t know if Gabe can have the parmesan cheese though. I substituted bacon for the pancetta since it was a last minute addition to the menu. Of course, not every one is a fan of brussel sprouts.

You are going to be together after a horrible tragedy. I wouldnt be worried about the menu. Order pizza and just love each other. You are so lucky that you still have your son with you. And he is lucky to have a loving family even though that can never replace what he has lost. Be grateful and eat cheese and crackers. All my best wishes to you this year end and hopes for a better year coming next.

Thanx everyone.

Dh's suggestion was noodles, something like spatzle, I think. Angora, our son loves good food and cooking. In fact he is trying to decide whether to go for an mBa or to chef school.

He would HATE just having pizza or any other form of take out. I may ask him to bake some of Heat's bread, as he has taken the basic recipe and done all kinds of things with it.

Bitsy -we are having Brussels sprouts for Xmas dinner the next day, but the recipe looked so good I saved it. Haili - lol that's what DH said!

But even though I am planning ham with baked sweet dumpling squash I grew myself for dinner Saturday I think, so far, Heat's winter squash gratin sounds best. My sweet dumpling recipe is just olive oil and brown sugar, but Heat's recipe is different because it is savory rather than sweet.

So glad to hear this. The world needs more good bread.

"Mushroom Purses" Intended as a main vegetarian dish, could be a nice side dish if made smaller and would look attractive with the tenderloin.

Boil Yukon Gold potatoes (cut up smallish) for about 9 minutes, drain, pour some olive oil in and shake the saucepan with lid on so that the potatoes 'crumble' a bit. Put potatoes in roasting pan, sprinkle some kosher salt over, and some more olive oil, then scatter dried onion flakes over all.

Bake in 400 oven for about an hour, turning potatoes over half way. Check to see they have browned nicely.

Everybody loves these.

bj, it strikes me that my answer to your menu question was insensitive and uncalled for. I apologize for that and hope you will forgive me for being so inappropriate at a time of mourning for you and your family. ( It would have been unacceptable at any time but, more right now)

Angora - I think you are overthinking this. I wasn't the slightest bit offended by your post. In fact, DH and I have been agonizing over how much Xmas decorating to do, etc. for the very reasons you mention. I don't think I ever mentioned how much of a gourmet Gabe is, so how would you know?

When he turned 18, his dad and I gave him a choice of taking he and his then girlfriend to Le Bec Fin - one of the then two 4 star resturants (the other was The French Laundry in Calif wine country) in the entire USA - for lunch (btw if Heat is reading, Le Bec Fin under new management was written up in Sunday's NY Times) or $250 in cash.

He chose lunch! and 16 years ago $250 was a LOT of money.
