I finally had the vegetarian dinner tonight and pretty much invented the recipe for green beans based on reading about 20 recipes online. We could have eaten even more as it was so good. 1 pound cleaned green beans 8 peeled cloves of garlic - if any are huge, slice lengthwise 1 large cipprioni or other strong flavored onion peeled and cut into wedges Olive oil Ground salt and ground pepper Take a glass baking pan and put beans, garlic and onion in. Drizzle a good quality olive oil over top of the veggies and stir. Grind salt and pepper to taste over all. Roast at 425 for 15 minutes. Then remove til close to dinner and then stir, put back in oven and roast another 30 minutes at 325. |

BJ I do similarly, add sweet potatoes and carrot chunks to the above, it is really good. I put in a whole clove of peeled garlic. Only change is to put everything except the green beans in the over for 45 minutes and add the beans for a further 20 minutes. Edited by Darcie, Jan 31 2013, 02:42 AM.
