The berries were purchased from Cosco at five dollars per three pound pack. The berries were grown in Bala, Ontario. Procedure was wash, add ten litres of water for each batch, boil in two batches, made into a slurry with hand blender and strained through a food mill, then the residue was put through a Champion Juicer. Twenty four litres of juice was obtained or each litre contains about one pound of cranberries. The jars were pressure canned at 15 PSI for 15 minutes for long term storage.The juice is a perfect texture for drinking. Pictures depict the process. Note: Cranberries contain absolutely no inherent juice. May I suggest the health benefits are mostly bullshit. My method of preparation utilizes the full berry and I use it as one would any good juice. I am even use to the bit of a sour taste. Absolutely not. Typical and normal body functions. I drink any of my juices with impunity and practically live on them, about two to three litres per day. Often mixed in the drinking glass. I try to create some variation now and then. Dehydrated vegetables with mussels. Baked potato with cooked garlic. A piece of Dutch Oven cooked pork. A piece of fried cod with baked potato. The aim is to try and not eat simple commercial prepared foods, unless I do the preparation. |

Too sour, too hard. I made cranberry garlands for my Christmas tree one year..never again. My fingers had holes in them for the next year with trying to poke a darning needle in the darn things. |

I'm curious to know if cranberry sauce could be made, and frozen in pint jars. I am quite hooked on the lingonberry sauce from Ikea but this would be much less expensive. Lingonberries seem to be a close relative of cranberries. |

I'm sure that freezing cranberry sauce should be no problem. I think that I have done it in the past when I had too much left over. Just don't fill your jars too full, -- or freeze in plastic containers. |

I like thel ingonberry sauce too, but I would simply make cranberry sauce like a preserve, can it rather than freeze it. Depends on hw much space there is in your freezer I guess.
