Just had to come here and rant for a moment. Knowing that Canadian Living recipes are usually always reliable, I tried the Stripey Chocolate Peanut Butter Loaf in the latest issue of the magazine, planning to take it to a pot-luck dinner. It was a lot of work layering the two doughs, one with chocolate and the other peanut butter. When I finished the pan was more than full. It rose up over the top when baking and stuck to the edge. When I took it out, I carefully loosened the sides before trying to remove it from the pan. It came out, mostly in one piece, then proceeded to separate and collapse!! Does anyone have any suggestions for serving this other than eating it in chunks and pieces? ---- And, no, it is not going to the pot luck. There went half of my morning and now I have to start over with something else. gaah.gif |

IMjene - I bet it would make a deligious bread pudding! Why not cut it in chunks, let it sit for a day or two on a cookie sheet, then mix up a few eggs, milk or cream, mix in the stale cake pieces and bake in a large cassarole dish? Serve with whipped cream? |

Imjene: It is so frustrating when a recipe doesn't turn out as expected. Is this an American recipe and you are using Canadian measuring cups/measuring spoons? Cdn 1 cup is 250 gm while the American is 236 gm. Suggestion: how about a chocolate trifle with crushed peanut brittle as garnish? Edited by erka, Feb 20 2014, 07:43 AM.

This is an interesting consideration, though I have not had trouble before. -- But yes, I was using a Tupperware measuring cup, which I think is American. I also have a Canadian measuring cup, but had not checked the difference, so thank you! BJ, I like your suggestion too. Maybe use cake instead of bread in the recipe? My husband also suggested a trifle. This should be interesting and I will try to report back on what I did. At least, it will not be thrown away. Edited by imjene, Feb 20 2014, 08:58 AM.

I wish I had seen the video before I made the cake, as the written instructions were not nearly as clear. I spread the first layer over the entire bottom of the pan before adding the next, etc. I did not bring the parchment paper up over the pan rim. Also the instructions did not say to let it cool entirely in the pan before removing it. I have never made a loaf where you had to let it cool in the pan, so it would have been nice if Canadian Living had been more instructive in their directions. I did post my complaint on their website! Now that I know, this might be worth another try. I served it to some of the guys who were working on a project here, even though it was more or less in pieces. They said it was a good blooper! Thanks for the video. |
