Corn on the cob

I have tried corn on the cob many ways. All good.

I was reading an article on boiling and it recommends not using salt in the boiling water as it makes it tough.

I add nothing to the water and boil for 12 minutes (my mother's timing.)
To the hot corn I add butter, salt and freshly ground pepper.

Next time (this week) I'll try it for 10 minutes.

No Trotsky, 3 minutes, unless you are boiling a dozen or more. If you are just doing a few, boil the water, throw in the cobs, bring back to the boil and boil for 3 minutes. Done!

Soak them overnight. Boil until the kernels separate from the cob when you chew it. If you gave to gnaw at it, it's too hard. But some people like it either way.

All corn today is GMO and all are hybrids. The corn in packages in the supermarket is identical in flavor to home grown corn. The corn today will not get starchy like in the days of yore about ten years ago.

At one time it was necessary to have the water boiling then pick the corn to retain flavor, not anymore. Shelf life was only a day or so. Now corn can be kept for probably two weeks and still retain flavor.

The only criteria when purchasing is to insure the kernels are not too mature. The kernels mature very quickly on all the corn grown today. The window of picking is probably only five days under typical conditions.

Cooking methods produce similar results. Probably only a personal preference. I also eat corn without cooking and find it more than acceptable, particularly when traveling and camping.

I cook it the same as Trotsky usually around 10 minutes with nothing in the water I never heard of adding sugar... though a friend of mine when boiling the corn always adds a half cup of milk She claims it makes it taste very tender.
