For Agate and anyone who may be battling this. Why am I still having symptoms? Excerpt from " Celiac Disease and Gluten Sensitivity"
This was a lot of help to me while working with my doctor. It has taken me a long time to feel as well as I do because I not only was celiac but had dairy and other foods that I was intolerant of. All I can say is don't give up, keep trying. Important to keep the search about which food has gluten, was surprised to find that soya sauce did. |

Darcie, have you tried brown rice pasta? I found it to be a tolerable substitute for wheat pasta. Not too expensive and found in a regular grocery store these days. When it was thought that I might be gluten intolerant I avoided it until tested. I am not intolerant of it, as I am to dairy, but still use the rice pasta now as it is a whole grain and ought to be less glycemic than wheat pasta. I just don't find whole wheat noodles palatable. I did test positive for lactose intolerance but am able to eat hard cheeses kefir and a little cream cheese. This article tells how to reduce the lactose in kefir further . I haven't tried this myself. |

Dana I tried the brown rice pasta, one taste and I threw it out. It was mush and tasted like mush. Strangely the doc said I am not lactose intolerant but intolerant of one of the proteins in milk, I could have yogurt and cheese and Iced yogurt in moderation in the past but just one little bit now causes me pain. He thought I would be lucky to get over the damage done by this and to not touch dairy of any sort. |

Darcie: Have you tried the rice noodles (wide noodles that is in Pad Thai) from the Asian markets? The trick is to soak the noodles until soft and briefly cook in boiling water. My friend uses rice wraps (as in Vietamise salad rolls) instead of tortilla type wraps. Dana: can you supply the link to reduce the lactose in kefir? |

Erka, never thought of those, have to go out later and will go to get them. I have used them in the past but I thought they had gluten in them, well I never checked, just assumed, my loss. Will try to find rice wraps also, never heard of those. Are all these noodles gluten free? You sure have shown me that I need to do a lot more searching. |

Googling 'kefir reduces lactose' brings up lots of results. My Doc agrees that it is ok. http://www.culturesforhealth.com/reducing-lactose-content-kefir http://www.webmd.com/allergies/news/20030530/kefir-helps-lactose-intolerance Darcie, sounds as if the noodles were way over cooked or not the right brand. If you can find 'Rizopia' it is worth another try. My GD eats it no problem, usually with some cheesy sauce. I tried all sorts and found these to be the best, so far. The oriental rice noodles are too 'white' for good blood sugar control but ok I guess if you don't have those issues. |

Darcie: I think most of the rice noodles are gluten free - ingredients are rice and water. Here is a link to salad rolls. We spent last night in Kingston and had dinner in a not great "Italian" restaurant dishing out mostly pasta and pizza. Mrs. Heat fancied dessert, and the wait person said, perkily, "We have a wonderful gluten free cheese cake" and seemed not at all struck by the idiocy of gluten free desserts at a joint specializing in gluten coated with tomato sauce. That is funny, everybody wants on the bandwagon. Went out all day today here and there and everywhere. I never could have done that even a month ago. It is great not to be in pain all the time or stressed out or think 'is there a bathroom around". It's like having my life back again. |

I have had just over 2 weeks now of not eating any bread. I must say I am feel better. I am enjoying the brown rice pasta. I had some almond flour so baked a cake yesterday with it. It also had some spices , honey & coffee. Very good. Now if I could find a decent bread!!! When I have my soup I like a nice crusty bun. |

Good luck with the bread/buns! On both, taste and price. It is a shame to have to pay so much for something that only vaguely resembles bread. I tired pizza crusts once ONLY! |

I have found one bread that seems better than anything I have tried. It is made by kinnikinnick Foods and is their Multigrain Bread. My daughter in BC sent me a recipe which I have yet to try, she said it is good as a go-worker gave her a slice to taste. Paid $5.49 for it but I keep it in the freezer and it lasts well. Make sure you pay attention to 'best before date' got one near to it and it was very dry. |

I am on the way to learning to eat, both no gluten and no dairy. It isn't all that bad, a bit high on the pocket book but I have found turkey kielbasa and that Natural Selections meat is gluten free. I seem to be eating better, but I still feel sad when I walk through a bakery and smell fresh bread. Here is the link to the bread my daughter was talking about.
