Superstore has "Pasta d'oro", 100% corn. Pretty good.
There is even gluten free pancake mix in the stores now.

One of my friends use SPELT flour for baking as it has a lower gluten content.

Superstore stock other gluten free products - rice paper for salad rolls and rice noodles to name two.

I have the Pancake Mix, will have to look for the Pasta d'oro.

Thanks Darcie, I am going to try that. I will have to buy all those ingredients . I wonder where to find the xanthan gum? And you are right it is getting
some what expensive. Yesterday I picked up a loaf of gluten free bread put out by Dempsters....$5.99. I had a tomato on it and it soon wanted to crumble & fall apart!

I also experienced the same walking by the bakery at Safeway, all that lovely bread & goodies .

I have found it at a regular grocery store called Food Basics, they have a wide selection and are somewhat less costly.

I really miss having a good bread for sandwiches, so I will try it also.

Agate, some of those ingredients are helpful in making these biscuits. I don't remember where I got the recipe.

1/2 cup sorghum flour
1/4 cup tapioca starch
1/4 cup potato starch
1 tbsp baking powder
1 tsp sugar
1/2 tsp xanthan gum
1/4 tsp salt
1/4 cup cold butter cubed
1/2 cup buttermilk.

Whisk sorghum flour, tapioca starch, potato starch, baking powder, sugar xanthan gum and salt.

With pastry cutter but in butter till crumbly.

Drizzle in buttermilk stirring until soft and sticky dough

Turn dough on wax paper and for a 6 inch log, cut into 6 regular rounds and put on parchment paper on baking sheet.

Bake at 450 degrees (about 14 minutes till golden).

GARLIC BISCUITS

Add fresh parsley, thyme into flour misture after butter. Mis 2 tbsp melted butter with garlic and brush over biscuits after 10 minutes of baking.

CHEESE BISCUITS

Mix 1/2 cup of shredded cheese after butter cut in.

This might be of interest to gluten intolerant posters.

For anyone's information.

I went to Superstore and was missing one ingredient so I went to customer service. She told me they no longer carried it (tapioca starch).

When we got talking she said her mother was gluten intolerant an that I should do what she did and save a lot of money. She quietly told me to go to a Bulk Barn and took my stuff and said she would put it back.

I went, OMG they have so much there and the prices are much better than in the stores.

Hope you have Bulk Barns out your way.

Quinoa is gluten free. I have it instead of oats for breakfast and instead of rice or other carbohydrates for dinner.

Darcie: I am surprised that Superstore doesn't carry tapioca starch. It is a must-have ingredient for chinese food - better for thickening sauces than cornstarch. Most grocery stores on the west coast (even in Powell River) carry tapioca starch.

Just back from Costco, and since I have read so many on here are now eating gluten free, you will be happy to know more and more products are gluten free. I bought Kozy Shack tapioca and rice puddings and they are gluten free. While I do not buy cookies other than arrowroots, almost all the cookies are gluten free. I realize more and more are going this route, but I don't like the manufacturer deciding we we all have to eat that way - e.g. there was none that do not say gluten free.

I really don't mind that they think they can get us to buy their product by saying it is gluten free if it really is. It does make me look at the product and read what else is in there.

A lot of products did not have nutritional information on them until it became law, we were blind buying.

The more information on a product the better, whether imposed by law or voluntary, have no problem with that.
