For anyone's information.

I went to Superstore and was missing one ingredient so I went to customer service. She told me they no longer carried it (tapioca starch).

When we got talking she said her mother was gluten intolerant an that I should do what she did and save a lot of money. She quietly told me to go to a Bulk Barn and took my stuff and said she would put it back.

I went, OMG they have so much there and the prices are much better than in the stores.

Hope you have Bulk Barns out your way.
Never heard of them out this way.

Although the best known celiac disease symptoms include bloating, gas, and diarrhea, many people with the condition never have any of these symptoms. Celiac disease -- an intolerance to the protein gluten -- is frequently misdiagnosed when a health professional only looks for the classic symptoms. Other symptoms, which are just as prevalent, but unrelated to the gut, include: anemia, osteoporosis, depression, growth problems, and a skin rash called dermatitis herpetiformis.

I stopped using gluten products about 3 years ago or maybe more. Over that summer I lost 30Lbs. I don't buy much in the way of gluten free advertised products because I find a lot of them have too much sugar in them. I use spelt flower ocasionally I like rice noodles.
Yesterday I was at a quilting meeting and lunch was served, It was a beautiful homemade chocolate cake celebrating one members 80th birthday. Today I am really suffering for having a small piece. Iknow that cake flour was used and sugar and lots of cocoa. So I think all three probably probably caused my bad day. I know sugar and white four do.

I hate always saying I can't eat that because people take offence. They think one is just being snotty but my son and law will only eat his wife's cooking and my sister was totally upset at that. It is like being between a rock and a hard place.

I don't think that there are more now, it is just that it is looked into a lot more. My doctor said he had taken a course on it just two years ago but had not known much about it before.

I never knew that anemia, osteoporosis and depression could be symptoms of this, without even the digestive symptoms. I guess this is why my doctor sent me for a bone density test, and asked if I was sad. lol. After reading that article from a UK university I finally understand why he did this.

Hmmmm ...... After reading your post Darcie, I Googled 'is Osteoporosis a symptom of gluten intolerance?', and I do not have one of the signs even though I have had Osteoporosis for years. I think they will try and attribute every ailment to gluten intolerance.

I do not believe that this is what they are saying, the list is short, just like we don't know all the causes of cancer, we do not know all the causes of osteoporosis.

They have found that 'some' patients of osteoporosis have celiac disease and that when put on a diet the progression of the disease is slowed down considerably in 'some' cases.

Some osteoporosis is familial, and I understand some cases can be due to the diet of the mother while pregnant, others can be due to hormones. They really do not know all of the causes.

Know quite a bit about it as I had an aunt who had a severe case of it with rapid progression.

Am sure I have said on here many times that mine is severe according to the T Scores; however I cannot believe it. Both my mother and grandmother had it. Grandma broke a hip in her 80s and managed well with a walker. My mother broke an ankle in her 60s. I have had more really bad falls than I can count, and so far have been fortunate to have not broken anything.

You will notice I always say 'so far' in anything I type with regard to health because I know how quickly things can change

My D has cut gluten and dairy out of her diet in an attempt to be rid of migraines. Perfumes etc a bit more difficult unless she decides to become a complete hermit. The upside, I hope, is that I too am eating far less wheat so my general health continues to improve. Once I finish all the bagels in the freezer I will most likely not buy bread anymore. We do have a loaf of the Dempster's GF, bought it when on sale, still half a loaf in the freezer. It is alright, rather tiny square that got stuck in the toaster, best idea is to just not make sandwiches or have toast IMO. My D and I love to cook so we are having fun coming up with new recipes all the time.

I find that I eat a lot more vegetables and fruit now because of no gluten the choices are different.

I was at Costco today and found a bad of gluten free flour. $8.99 if I remember right. If the recipe calls for 2 cups of flour just use this stuff. It has the potato starch & tapioca rice and sorghum.

I hope to get at it tomorrow and I will try those biscuits and let you know how they turn out.

I have about 10 bags with various stuff sitting on my counter. I have to dig out glass jars and labels to put it all in. I am going to be following those recipes carefully, probably tomorrow.

Do you know the weight Agate? I got 5 lbs of this flour with a recipe on how to use it to replace regular flour in any recipe, it does say that one has to add Xanthan gum and gives you proportions.

I tried a bread mix, the first one was great, the second time it did not cook in the middle in the time which was said on the box. Had to throw it out.

I guess it all takes practice and experience.

Xanthan gum seems to be necessary in many recipes using non-wheat flour. The main concern, from the few articles I scanned, is that it should be avoided if you have with digestive problems. I think the properties that cause an increase of, or introduces (in my case) such problems means I will try to avoid avoid gluten and gluten free foods! Probably much healthier in the long run.
