I have been tempted to try steak tartare, but at the last minute I always remember the wonderful episode of Mr. Bean on a splurge. He ordered steak tartare and made the most wonderful faces when he slowly realized it was raw and then, embarrassed to send it back, he tried to get rid of it. I've has steak tartare once, didn't think it was anything to write home about. I do love sushi and have some any time I can. My granddaughter took a course in Montreal to make sushi, was 20 sessions in all. I have helped her when she made it It is very differently prepared fish, not just any old fish. |

I don't eat raw anymore, either! Too much contamination in our food now! I have eaten suchi but am not enamoured with it! For sure, chicken would very likely kill you! Once in Texas I had food poisoning from eating COOKED seafood and now live with impaired kidney function! |

Australia serves Kangaroo meat slightly seared but mostly raw. Then they cover it with some sort of special sauce. I asked the chef I would like it well done and he refused because he said it would be tough as shoe leather to do that. Kangaroo meat is cooked by the chef on a stand right beside ones table & served. The chef made me taste it but I was not thrilled at eating meat that was totally red. |

My goddaughter married an Australian and they lived there for several years before moving to the states where they often ate kangaroo meat cooked medium rare, which is how I eat my steak. Medium rare is hardly raw. |

Blue Rare steak for me but medium well for hamburger, hence I eat VERY little hamburger. On steaks the bacterial contamination is ON the steak and seared instantly with very high heat. With hamburger however, the surface contaminants are pulled INTO the burger and thus pose a far greater danger if the inside is pink. But with current prices, I rarely eat beef more than once a month, if that. I simply will not spend $4 a pound for stewing meat or twice that for low grade steak. I can't even look at red meat in the supermarket now. I have become more of a vegetarian in my old age. Chicken carbonara and stuff like that intrigues me now. |

I'm a purist...for my carbonara it MUST be bacon (or fatback in the original, but fatback is hard to find and thick sliced bacon is a very good substitute.)
