I made this casserole last evening for dinner. It was very good, and hearty for a snowy cold day! Ham and broccoli make this macaroni and cheese casserole hearty and delicious. Ingredients 2 cups uncooked elbow macaroni 3 tablespoons butter or margarine 1/4 cup all-purpose flour 1/4 cup finely chopped green onion 1 teaspoon salt 1/2 teaspoon dried mustard 1/8 teaspoon pepper 2 1/2 cups milk 1 package (10 ounces), frozen chopped broccoli, cooked and drained (about 1 1/2 cups) 2 cups cubed cooked ham 1 cup shredded sharp cheddar cheese 1/2 cup dry bread crumbs tossed with 1 tablespoon melted butter Prep Time: 0 minutes Cook Time: 35 minutes Total Time: 35 minutes Preparation Cook macaroni according to package directions; drain and set aside. In a medium saucepan melt 3 tablespoons butter over low heat. Add flour, green onion, salt, mustard, and pepper; stir until well blended. Gradually stir in milk until blended. Bring to a boil; cook, stirring constantly, until mixture is thickened and bubbly, about 2 minutes. Stir in broccoli, macaroni, ham, and cheese. Transfer mixture to a 2-quart casserole. Sprinkle buttered bread crumbs over ham and macaroni casserole. Bake ham and macaroni casserole recipe at 350° for 30 minutes, or until golden brown |

Must be big eaters here! I made up a batch and my friend and I ate almost half of it. Had enough left over for 3 lunches. I had to modify your recipe some what! I thought I had ham on hand and didn't so i used Italian sausage instead. I couldn't find frozen broccoli so bought some frozen Portugese mixed vegetables instead. I shopped at an ethnic grocery store, so some choices were limited. I like a little bite in my food so I shook a few drops of Frank's Hot Sauce in also! My friend and I went back for a second helping, so my subs. didn't make it unpalatable. Next time, when I have some ham on hand, I'll use it as you say! Thanks for your post, it will help me increase my repertoire. |

I am lazy when it comes to "side dishes" so for me it is STOUFFER'S RED BOX Macaroni and Cheese when it is on sale. Pretty good product. |

Stouffers mac and cheese was my favourite mac and cheese dish until I discovered Nigella's kind. It uses three kinds of cheese and takes a little work but OMG it is heaven. Don't have it often but when I do we gloat over every bite. |

I like Kraft Dinner Smart pasta. I like the idea it is digested like whole wheat. The other reason I like it is to annoy my daughter. I pretend that I think it makes me smarter and she gets all annoyed. Some day I might annoy her too much and end up in a special facility! :winking71: |
