Combine in a mixing bowl: 1-2/3 cups of flour 1/2 cup sugar 2 tsps baking powder 1/2 tsp salt 1/2 tsp nutmeg Mix well and add: 3/4 cup milk 1 beaten egg 1/3 cup melted butter Mix until the dry is mostly absorbed, do not over mix. Spray and flour small muffin tin. Fill 2/3 full and bake at 400 for 17 minutes . When they come out of the oven dip each muffin top in melted butter and a mixture of 1/2 cup of sugar with 1 tsp of cinnamon. Edited by Darcie, Dec 26 2014, 09:52 AM.

Sounds delicious, Darcie. How do you think it would be skipping the topping part? Perhaps adding cinnamon to the muffin mix? (For me, the simpler the better.) Is it regular AP flour? |

Regular flour Trotsky. I would not skip the topping, that is what makes them. We only have them once a year, now I do not even eat one. They are favourites of everyone. |

I noticed no sugar other than the topping. I think they would be pretty bland without the topping. Oops. 1/2 cup sugar. Edited by campy, Dec 27 2014, 04:54 AM.

This is an excellent recipe. This is a picture of them just out of the oven without the sugar topping. I was thinking brown sugar instead of white sugar for the topping. They tasted great. Probably the best muffin recipe I have ever used. |

Made a mistake. Used baking soda instead of baking powder but still came out good. I think they rise more with baking soda. |
