In saucepan 1/4 cup butter 3/4 cup brown sugar 1/4 cup water 1 tsp salt ? 1/2 tsp nutmeg 1/4 tsp ginger 1 cinnamon stick Pour on sliced or cubed sweet potatoes Cook on low heat for 5 minutes and put on cubed sweet potatoes,remove cinnamon sticks. Bake @375 for 20 min, baste/stir and bake further 20 minutes. I just tried this new recipe and it is really good. I did not put salt in it. |

Favorite method: I boil them for 1/2 hour, drain and add butter, ground cinnamon, a touch of ground cloves and a Tbsp. of BROWN SUGAR. Whip with mixer. Alternate. Pierce with fork, microwave, slice in half and add butter. ALDI'S has them alternatively for 3 pounds/$ .99, or 3/$1.49 so we go through a lot of them. Especially good with fish fillets. |

Fresh is fine. They really are best when roasted though; you would see why I say no brown sugar is needed. Roast, then open and mash in some butter, cinnamon and ginger. |

There is nothing better than roasted kumara (sweet potato), roast lamb, along with golden roasted potatoes, roasted pumpkin, minted peas and meat gravy. Forget the added sugar, cinnamon, ginger and garlic! |
