In saucepan 1/4 cup butter 3/4 cup brown sugar 1/4 cup water 1 tsp salt ? 1/2 tsp nutmeg 1/4 tsp ginger 1 cinnamon stick Pour on sliced or cubed sweet potatoes Cook on low heat for 5 minutes and put on cubed sweet potatoes,remove cinnamon sticks. Bake @375 for 20 min, baste/stir and bake further 20 minutes. I just tried this new recipe and it is really good. I did not put salt in it. |

I will go for the lamb, the minted peas, the roast potatoes and Cross & Blackwell mint sauce or my own home made. Forget the gravy and the sweet potato with lamb. |

Now these are nice ... and I'm not usually a muffin fan! A tasty savoury muffin. Ideal for lunches and snacks. Submitted by: Judy from Womans Institute Cook Time20 minutes Prep Time10 minutes Servings12 muffins Ingredients 200g Gold kumara 1 3/4 cup flour 1 tsp salt 1 tsp baking powder 1/2 cup milk 1/4 cup chutney 2 eggs, beaten 50g butter, melted 1/2 cup cheese, grated feta cubes placed on top (optional) Method Sift the dry ingredients into a bowl. In another bowl combine; milk, chutney, kumara, eggs and butter and add to the dry ingredients. Mix until just combined. Spoon into greased muffin tins, top with cheese (either grated or feta cubes). Bake at 180 degrees Celsius for 15 to 20 minutes until golden brown. Kumara Rosti Brunch with poached eggs, bacon and hollandaise sauce A cafe style breakfast or brunch designed to impress family and friends at home. Submitted by: blah blah blah cafe/bar in Dargaville Cook Time15 minutes Prep Time30 minutes Servings6 Ingredients KUMARA ROSTI 750g kumara, peeled and coarsely grated 1 cup shredded spring onion 1 tsp salt and pepper 2 eggs 2 tbsp flour HOLLANDAISE SAUCE 1/2 cup unsalted butter 2 tbsp lemon juice 1/4 tsp salt 4 large egg yolks 1 dash Tabasco sauce lemon zest eggs bacon rashers Method Peel and coarsely grate kumara, rinse and squeeze out excess water. Place in a large bowl and add spring onion, eggs, salt, pepper and flour. Combine well. Make into desired hash brown style shapes. Fry until golden on the outside and kumara is soft on the inside (can be finished in oven if preferred). To make hollandaise sauce microwave butter, 1 tbsp lemon juice and salt in a medium microwave safe bowl, covered with plastic wrap, on high power until butter melts, about 1 minute. Whisk to cool slightly. Whisk in egg yolks until blended. Microwave covered on medium power for 30 seconds and whisk until blended. Repeat twice. Whisk remaining lemon juice, zest and the Tabasco sauce. Makes 3/4 cup. Serve Kumara Rosti in a stack with crisp bacon and poached eggs, drizzled with the lemony hollandaise sauce.
