My grand daughter is coming over this morning, which means pancakes and bacon. I use yogurt rather than buttermilk, because the buttermilk never seems to get used up. Often I add blueberries. What are yours like? |

My mouth is watering. I have some gluten free mix, should try it. I like them with bacon, or put cream cheese on them along with berries, or roll them around sausages, or with marmalade, or of course with real maple syrup. I do prefer Belgian Waffles though. |

Standard issue: Aunt Jemima, add egg, corn oil, and whole milk. Usually with blueberries. Well buttered and syruped. (We buy Brand X syrup and add 5-10% maple syrup to it.) Brand X pancake mix just doesn't "rise to the occasion" like AJ. We have pancakes and or waffles weekly. We love them with bacon, but we use it sparingly these days... no need for more cardiac grease than necessary. Edited by Trotsky, Feb 14 2015, 03:08 AM.

I am not a fan of pancakes and do not make them. My mother made the Dutch style ones, thinner ones, and she made a lot of them for us 6 kids. |

When my daughter was home Sunday morning was always crepes, made with a little Grand Marnier in the batter. They don't really need anything else, but are particularly nice with strawberries. |

Pancakes -- no but waffles -- yes! Our daughter gave us a bottle of ginger syrup and we both enjoyed it so much that I now make our own with the largest container of no name syrup heated with slices of fresh ginger, then re-bottled. 1/4 the price, 4 times the amount of syrup. |

I am going to try this, I have used ginger marmalade on pancakes which was very good. I detest syrup of any sort except maple, when on sale I will try this out. |

I used to do pancakes for the family. Most often with some sort of fruit but if it was for lunch, with cheddar cheese and apple slices. So nice to have something savoury along with sweet. Bacon and sausages are off my list now along with white flour and I don't like the other flours and need no more of that in my diet. I enjoyed it all while I was younger and would like to repeat but time has a way of taking the fun out of some things. |

Waffles. From a very old cook book. You can cut the recipe in half. 1 1/2 cups flour 2 tbsp sugar 3 tsp baking powder 1/2 tsp salt Combine 2 eggs beaten 1 1/2 cups milk 1/4 cup butter or margarine melted Add liquid to dry ingredients Pour batter onto hot waffle iron. Makes 6. 7 inch waffles. Buttermilk waffles. Same batter but baking powder 1 tsp-.and add 1/2 tsp baking soda. Sour milk or buttermilk for milk. |

I'm not a fan of pancakes either, but make banana ones sometimes, served with bacon and maple syrup. My grand prefers waffles so my DH makes them for her, accompanied by strawberries. She loves bacon so that has to be rationed, until she eats her 1/2 of a waffle. I always doubted the nutritional value of pancakes, so rarely prepared them for my kids. Growing up on the farm we'd have them for supper occasionally in the winter months. |

I make my own mix consisting of: 4 C. W.W. flour 4 C. White flour 1/3 C. baking powder 3 tsp. salt (or less) 1/4 C. sugar 2 C. shortening (I use Canola Oil) Keep the mix in the fridge or freezer. For two people, take out 3/4 to 1 Cup of mix. Add 1 egg and about 2/3 Cup of water, or to desired thickness. Mix and fry. I sometimes add blueberries or nuts to the mix and serve with real maple syrup and butter. We have this for breakfast at least once a week. |

Pancakes are mostly a sponge to soak up maple syrup and butter, so not healthy. But delicious, and a great occasional treat. Probably no worse than sugared cereal. My usual breakfast these days is some combo of lots of vegetables (often a chopped avocado) and a little meat. There is a great waffle recipe involving yeast, which produces very crisp, excellent waffles. If I can find it I will post. I have yogurt, fruit, almonds and flaxseed every morning. Occasionally on weekends i have bacon, and eggs as a treat. I always made my kids cooked cereal/toast for breakfast. If I bought cereal it was bran flakes, shredded wheat or a cereal I thought was nutritional.. Weekends they ate what they liked basically. |
