The dried peas were boiled for 20 minutes to soften.Raw hulled sesame seeds were cooked for seven minutes.Ingredients sesame, peas, a tablespoon of olive oil, water, and garlic was blended to a smooth texture. Two batches were made. The end product is fine eating as is or it may be used as a spread. Salt can be added if deemed necessary.It is just another nourishing convenient food. Posted Image |

Neither John nor I like hummus and when we go out our host is always presenting us with a special hummus recipe because they know "we like it so much". I don't eat any but John does to be polite and I blame him when we keep being presented with the stuff. |

We used to frequent a wonderful Middle Eastern restaurant in Brooklyn long ago (since made into a high-rise condo grumpy.gif with a goddamn Starbucks downstairs <ak47.gif> ) and they always served plates of hummus and babaganoush swimming in olive oil with pita as soon as you sat down. No ordering required. I LOVE both (especially the babaganoush) so never a problem. So I understand what you are saying, angora. Has ANYONE ever tried their hand at babaganoush? I haven't but would love to dare it. Just writing this gave me a mental picture and taste of their wonderful Bestela Pigeon Pie...sigh, our world is getting homogenized. Add me to the list of people who loves Hummus! It's just wonderful. I buy tahini from Bulk Barn which lasts forever. What I haven't tried are those chick pea balls (is it Falafel?) eaten on a bun like a meatball sub. |

I'm very fond of falafel. There used to be a wonderful place in Toronto, Aida's, had the best falafels and tabouli. Here we usually see them in a pita, not on a bun, but they would be good however you have them. |

Substitute for Sesame Seeds For 1 tablespoon sesame seeds substitute 1 tablespoon black poppy seeds OR pumpkin seeds OR finely chopped nuts such as almonds, peanuts or cashew nuts Equivalents 1 oz. sesame seeds = 3 tablespoons Common cooking oil. laugh123 That's EXACTLY how I would have explained it. It's also a lighter texture than hummus. I guess it's less popular because it involves roasting an explant and then peeling it to get at the hot, cooked flesh...messy work. I wonder if it could be peeled COLD and only the insides cooked? I absolutely adore eggplant so I will have to try that. Once in a while I see it at 99 cents a lb. while the usual winter price is around l.50 lb. I will have to read up on how to sex them again to avoid the ones packed with seeds. |

I used to make hummus for potlucks, dinner parties, appetizer with sourdough bread etc. Always with extra garlic. No idea why I have not made it lately. Made felafel also and hope to make it again this month. Love babaganoush! Have never made it but I do have two eggplants that need to be used in the next day or so. |
