Warm grilled turkey sausage and roasted potato salad.

3 tablespoons of red wine vinegar

2 tablespoons of Djion mustard

1 tablespoon of olive oil

3/4 tsp of both salt and pepper

1/1/4 lbs of small potatoes, or large, cut into 1 inch chunks

1 teaspoon of thyme

1 pound of turkey sausage

4 cups of mixed salad greens or spinach

1 ~ 7 oz. jar roasted red peppers drained and chopped.

1/2 cup sliced red onion

15 small pitted and chopped black olives ( I rarely include these)

1. Preheat oven to 425. Spray a cookie sheet with nonstick spray. Whisk together the vinegar, mustard, oil, 1/4 tsp of salt and pepper in a small bowl until blended.

2 Combine potatoes, thyme,1/4 tsp of remaining salt and pepper in a large bowl. Lightly spray the potatoes with nonstick spray (or olive oil) toss to coat. Arrange potatoes on tray and roast for 40 minutes or until tender and browned Transfer potatoes to a large bowl and set aside.

3. Broil or cook sausage until browned or cooked through. Cut sausage into 1 inch chunks, add to potatoes. Stir in the salad greens, onions, olives, and roasted peppers. Drizzle with the dressing, toss to coat. serve at once.
