My son made a Thai salad last weekend with rice sticks and a peanut butter and honey dressing. The rice sticks are almost instant as you just put them in water for a few minutes. Very delicious. bean sprouts, vegs. and peanuts add a nice crunch.
That sounds really good. Could your son give the dressing recipe, I am not all that good about stuff like this. I even have the rice sticks lol What kind of vegs did he put in?

I love the way Thai salad dressing incorporate peanuts. Next time I use bottled Italian dressing I will whip in a Tbsp. of natural peanut butter.

(I use the instant type rice noodles with a concentrated miso paste and boiling water and a little tofu If I have it.)

Sorry I missed this post. I will try to get the recipe from him tonight. I asked when he first made it and he was quite evasive but I'll wring it out of him!
