Bird Flu has devastated much of the Central and Western states with IOWA alone losing 25 MILLION laying hens. Prices are soaring and I am always adamant to cut back when these episodes occur. I do it for coffee when prices soar, I got rid of the car when gas soared, I rarely eat beef and now we have cut back drastically on eggs. I feel that if all consumers do this, that when supplies are normalized the price gouging will stop and normalcy will reign in the marketplace. So we have added a cold cereal breakfast, a bit more steel cut oats breakfasts and a continental (bagel only) breakfast atop a weekly lox and bagel breakfast. We are doing eggs only once a week instead of 4 times...last a ham and cheese omelet. (Today's breakfast: Special K and Milk.) How about you? Are you seeing super-high egg prices? Alas, since I have no local Walmart, I would have to order online and hope eggs survive UPS delivery, which I doubt. (So that comes to $2.78 a dozen and that will be my new guidepost.) I hope this doesn't mean a permanent big price hike for eggs, it will have ramifications. Remember the first time the Brazilian coffee crop failed. Diners that had been selling coffee for a dime a cup all raised their fees to a buck. Brazilian production recovered but the diners never lowered their prices and a dollar became the STANDARD price until Starbuck's banged it up to $3. Edited by Trotsky, Aug 10 2015, 01:17 AM.

I know Trotsky. It is the great deal on their dog food alone that makes it worthwhile for me. Of course prices are going up everywhere, but lately Tetley tea bags are $12.49 for 300 at Costco so 4.16 cents/tea bag, and at Walmat $7.49 for 216 and 3.46 cents/tea bag. Now once in a while Costco has $3.00 off on the handouts they give you as you enter which works out better. The main reason I notice this is that I consume a lot of tea. Take care, Pat |

Why on earth would you worry about a 20 calorie difference Darcie, or do you mean to say you are actually trying to lose weight and it all did not just happen due to the gluten intolerance? I find at our age weight loss plays hell with the wrinkles so I'll keep on eating. lol Take care, Pat |

lol, that was before and I got into the habit. If I buy meat I try to get the leanest possible, not much nutrition in fat except calories, and eggs similarly not much nutrition in the whites, at least this is what I am told by the dietitian. I try to get my calories in with the protein as much as possible. I am doing well on weight I am told, just have to try more vegetables, but each time I try I hurt. |

I buy for value and here's the accepted standard. The next size up is 10% bigger than the last so if it costs LESS than 10% more, buy the bigger eggs. If the bigger cost MORE than 10% more, then go with the smaller eggs. Our favorite way for eggs is "over light" or "over easy" and a big dippable yoke is a nicer meal, so my size of choice is exclusively JUMBO and we USED to get them often for 3 dozen/$5. Now it's more than twice that amount. To me even EXTRA-LARGE seem too small. Today Bob announced "French Toast for breakfast, and of course with that meal, or pancakes or scrambled eggs, size is immaterial.
Eggs have traditionally been the cheapest source of high quality protein and nearly ALL the protein is in the whites, nearly all the fat is in the yolks. Edited by Trotsky, Aug 19 2015, 12:48 AM.

Maybe for me it is the nutrition I need? Finally found what he told me or approx....... "The egg consists of the thick, clear white (albumen), approximately 60% of total weight of egg, and a yellow yolk, approximately 30% of total weight of egg. The white is 87% water and 10% protein. The protein in egg whites coagulate at 150 degrees F (65 degrees C). The yolk consists of 50% water, 16% protein and 32% fat. The protein in the yolk coagulates at 158 degrees F (70 degrees C)." I guess for $ value he thinks that less of the 87% water is not important nutritionally. I will have to ask him when I see him in Sept. Edited by Darcie, Aug 19 2015, 03:00 AM.

I think I can understand why my dietitian told me the nutrition for me was better in smaller eggs, proportionately less water in the whites and more fat in the yolk, I need fat as I get no fat from any cheese, yogurt, butter etc. My fat has to be from sources such as this. I also do not seem to digest fats from oils well at all, they are looking into that. Forgot to say that I detest fat in meat, but I do eat 1 slice of bacon a day and it has to be as lean as I can find it. Edited by Darcie, Aug 19 2015, 05:38 AM.
