Flaxseed Cookies

1/2 cup butter softened
1/2 cup brown sugar
1 egg
1/2 tsp vanilla
1 cup all purpose flour
3/4 cup quick cooking rolled oats
2/3 cup ground flaxseed
1 tsp baking soda

Cream butter and sugar until light;
beat in egg and vanilla.

In separate bowl whisk together flour,
oats, flaxseeds and baking soda; stir
into butter mixture until soft dough forms.

Drop by level tablespoonfuls, 2" apart on
ungreased baking sheets. (I use parchment)
Bake at 350 F for 12 minutes. Let cool on pan
on rack for 2 minutes.

Transfer to rack and let cool.

Makes approximately 40 cookies.

Ah, flaxseed.
Remembrances of Things Past...the Atkins' Adventure.
Oh I did not know about that Trotsky. One of my friends at the lake got me started on it, and my cholesterol was great. However, I slackened off and last year the doc told me it was creeping up. Will behave myself for the next month until my annual physical and see what damage I have done.
