Watermelon do not ripen further after the umbilical cord has been cut. Found this out today.I am getting tired buying unripe watermelon. About four out of five of my purchases are under ripe. There is no way of determining ripeness accurately by visual inspection unless they are opened in my experience.

I have a brix meter and measuring one watermelon purchased two weeks ago had a reading of 20, one purchased yesterday had a reading of 10, decidedly under ripe. The higher the reading the higher the sugar content, which is an indicator of ripeness. Twenty or so brix is about fully ripe.

I read somewhere to look at its underbelly and be sure that it is yellow not green and looks like it's been lying in a field for awhile. So far it's working for me although I've only bought 3 watermelons. I buy the midsize (around 10 lbs) and once I cut off the rind, it all fits into 2 4- cup pyrex containers.
I wonder if they still sell watermelons with the hundreds of seeds.
It's such a wonderful treat when it's ripe.

My daughter knocks on the watermelon and somehow can tell if it is ripe or not. Have tried it for myself many times, I just can't tell.

There's a certain subtle hollow sound with a ripe watermelon.

Remember when the seller used to remove a triangular CORE for you to taste?


Now you have me DYING for a watermelon. THey are on sale locally...$2.99 I believe. But I doubt I have the fridge space.
