1-1/2 tbsp apple cider vinegar 1-1/2 tbsp tamari 1-1/2 tbsp pure maple syrup 1/2 tsp ground black pepper. Mix together in a small cup. 2 tbsp cooking oil (I used canola and olive) When oil is simmering add 6/8 chicken thighs that have been salted with sea salt. Brown well both sides. When brown add the sauce and keep turning every few minutes till the mixture is thick and syrupy. Remove from pan and pour sauce over chicken. I served with schezwan rice, really went well with it. |

That sounds very good, Darcie .For so many years I would only eat chicken breast or white meat. It's amazing how tasty the legs and thighs can be. Another plus is all the iron they supply and there is also the lower cost.

These were boneless and about the same price per pound as the breasts, but they are tastier I think. |

I cannot stand the tendons and cartilage in a drumstick but I so love chicken thighs, even more than breast meat. (I do mine in an electric skillet on low (like 250 degrees F.) for about 80 minutes. They brown in their own rendered skin fat.) Edited by Trotsky, Aug 1 2015, 07:39 AM.

I do the whole legs in the oven on a very low oven (250) and cook them about 5 hours from frozen. The fat is all rendered out and they turn out very brown and tender. And yes, I love the crispy skin. I can buy the legs anywhere from l.99 to 2.99 per lb. |
