Slow Cooker Pork Roast.

1 -3 lb. roast of pork

1 can of beer

1 can of mushroom soup

1/2 cup of barbecue sauce

Mix the three ingredients in slow cooker and add the roast. Cook for 6 hours.

Swing, that sounds like it will yield a LOT of WET. DO you serve the "sauce" over something like pasta or rice?

I'm wondering too. Otherwise, it does sound good and a good way to use up some of
the beer in our overflow fridge!!
My husband went overboard when he saw a beer sale and
we haven't had enough people around this summer who like to drink it. I don't drink it at all
and he only has an occasional one on a hot day. How long can you keep it in the fridge?

Less than 6 months I have heard. It gets, and this is the official term, SKUNKY.
(I had a Summer job in high school in a brewery...perfect place for me.)

The lower the alcohol, the faster it goes stale, so light beers are particularly fragile.

So then, BIG party at imjenes?

It does yield a lot of wet! I just put the wet on the sliced roast, served with new potatoes and coleslaw. I found 6 hours too long for a 3 lb. roast, it was overcooked in my opinion, a larger roast would probably be fine. My slow cooker is reasonably new though and cooks hotter on low than the old one.

Corona keeps well for a couple of years, I had some in the back of the fridge and never got around to drinking it. When my brother-in-law was here I offered him one if he was willing to take the chance and it was fine.

All recipes for slow cookers tend to emphasize very little liquid should be used.

I also find that the Crock Pot (ancient model) seems to cook MUCH faster than most recipes indicate.

You could cut the liquid in 1/2, drink 1/2 the beer and use 1/2 the soup. This recipe came from Chatelaine I believe. I tend to rip recipes out of mags. and don't remember which one!

I've made this recipe twice now and it's definitely a "keeper". After taking the pork out to cool I use my stick blender to mix in the onions and it seems to thicken it enough so it doesn't need re-heating.
