Easy baked Chicken Thighs.

1/4 cup of pepper jelly

1 tsp. of Djion mustard

2 tsp of honey.

Dip chicken thighs in mixture. Bake at 350 for 1/2 - 3/4 of an hour.

What is "pepper jelly," swing?

Oh, I would bake my chicken longer than that. And I LOVE chicken thighs...I'll make them tomorrow.

Jalapeno pepper jelly Trotsky. It's available in red as well as green jelly, sold in jars here. It's also good as a topping on crackers with cream cheese ~ addictive!!

A mess for the oven though, I'll bet.


I have never seen jalapeno pepper jelly...sounds terrific. I am enjoying a nice wedge of jalapeno Havarti.

You can get red pepper jelly at Costco. I've had a jar in the back of my fridge for some time, so must try this recipe!
Chicken breasts should work okay too, right?

But they cook much faster than thighs.

Nuts, I am lapsed at Costco. We have a trial membership at BJ's but it is in the BRONX and I am loathe to go anywhere NEAR that Legionella outbreak.

I agree, they all do here, in Safeway it appears in the deli section for some reason. Superstore I buy their own pc brand.

Never checked the oven Trotsky, the pyrex dish I use gets messy. I spray the dish with Pam first and the mess is easily removed.

For anything that needs to be browned in the oven, like chicken or pork, I find that there is a very hot layer of grease that forms in the bottom of the baking utensil and then every little drop of MOISTURE that hits the grease makes a tiny little explosion and that propels droplets of grease up and onto the oven walls. FIrst time oven is put up to 400 OR 450F, that grease chars into tenacious carbon.

So for chicken thighs I have taken to making them in a very large covered electric skillet at about 300F and turning frequently. Eventually they get nicely browned but it takes time and bother.
If I replaced the stove, I would make sure of a self-cleaning oven. Cleaning an oven at floor level is the worst thing I can do to my back. But stove is new as of 2010, so it will likely be a long time for me. Non electronic gas stoves last forever in my experience.

My sister has a new oven that I rather fancy. It cleans by steam rather than incineration, which tends to create a lot of smoke and odour. After the steam softens all the grime, you just wipe it out. It's probably no more work than wiping out the ashes in a conventional self clean oven.
I don't clean my oven as often as I should because of the smoke factor. Of course, this makes the smoke worse when I do finally clean it.

I imagine one could put a try of water in a 400F oven and make her own steam?
(I have read that doing exactly that with some ammonia in the water cleans ovens well. I tried it once but then still had to go with the lye based Oven Cleaner (from the Dollar Store.)

I might try again after I make my next Pernil.
