Nine types of beans purchased from a bulk barn were pressure cooked and blended into a mash and stored in plastic containers.They are frozen and used as required. I use them as a reasonable replacement for meat by re-frying or ingest as they are. They are inexpensive and simple to prepare. Pictures depict the process.

Most Americans are not eating enough beans, although people in the southern and western regions of the United States consume more than those in the Midwest and Northeast, even though half of the beans grown in the country are from North Dakota and Michigan. Americans consume about 6.5 pounds of dry beans yearly which is equal to a little more than 1/4 of the 2005 Dietary Guidelines for Americans' recommendation of 3 cups of beans per week.

I buy the black beans, soak overnight and use half and half with canned.
One can black beans, liquid and all, and equal amount of soaked or cooked dry beans into a powerful blender and a can of water.
Add a heaping tsp of cumin, couple squirts Louisiana hot sauce and 1.5 ounces lemon juice (squeezed or poured.)
Puree on high (I use all 965 Watts.)

Pour into a Double boiler for 45 minutes, covered. I hate to stand and stir so double boiler prevents burning.
Don't add salt...unless you are using all dry beans. The single can of beans has enough salt for the whole dish.
Sprinkle a Tbsp. chopped onions atop each serving.
Good with a crusty bread.
It's a whole, high protein, VERY high soluble fiber meal.
Mandatory if either of us gets constipated...one serving (half the amount made) is equivalent to 7 servings of Metamucil. :ciao:

Once in a while I use white beans the same way, but black are my favorite. I make my chili with a mix of black white, kidney and pinto beans. (usually all canned.)
Back in the old neighborhood, Shop-Rite did their semi annual Can-Can sale and sold their canned beans at 4/$1...all varieties.
Things are different here and now. :sigh:

Beans are delicious and economical. When I buy canned French Canadian style pea soup, I dump in l/2 a tin of garbanzos. They blend in with the peas and create a filling and satisfying meal.
In my neck of the woods, canned garbanzos have gone up in price due to popularity, I suspect. I came across the Walmart brand which are less than l.00 for a large tin. I know I should be making them from scratch. On my someday list.

A trip to the bulk food store to buy dried beans and peas is money well spent. Preparation is simple and one can do anything with them only limited by imagination. The most important is to insure that they are cooked throughly. I suspect most complaints about beans is attributable to not cooking properly and throughly. The condiments if desired can be an improvement over commercial preparations. Personally, I am use to the bland preparations- INJUN cooking.

I used to cook them with a ham bone or pork hock and canned tomatoes but haven't made them for years. My mom always put a pinch of baking soda in them to take out the squeak.
