I bought a bag of green beans today at Costco, unless we eat them every day for a week they are going to disintegrate. Any idea how I can preserve these? We used to freeze green beans on the farm but had to blanche them first. I suppose this is still the preferred way or they will be mush. |

Thanks Durgan bought some cauliflower and Broccoli also, so will throw a little of everything in the blender, for lunch one day. |

Put them in boiling water for a few minutes, then chill with ice water & freeze. |

And eat half and hate them and throw out the remainder. Like most frozen vegetables with a few exceptions. |

If you are eating them in a short time ( a few weeks) blanching is not necessary. I freeze many vegetables to add to smoothies and no damage occurs if they are eaten soon. |

Green beans are a bit rough. Juiced, they are acceptable. Just another vegetable with some possible nutrients. |

I really like green beans, steam them and put butter and toasted almonds on them. Really good if cooked correctly. |

I like them too. I prefer the yellow ones but both are good, steamed or picked and eaten straight out of the garden. |
