APPLE PORK CHOPS WITH GARLIC POTATOES 1 lb (500 g) small fingerling potatoes 2 cloves garlic kosher or coarse salt 4 boneless pork chops about ½ inch thick (150 g each) 2 tsp chopped fresh sage, or ¼ teaspoon dried freshly ground pepper 1 tbsp olive oil 1 large red onion, in ½-inch wedges 2 firm apples (Cortland or Granny Smith), cut in ½-inch pieces ¾ cup apple cider or juice ¼ cup rice milk with 1/2 tsp vinegar. 1. Combine potatoes and garlic in a medium saucepan, cover with cold water and add salt. Cover and bring to a boil over high heat, then lower heat to medium, uncover, and cook until tender, about 15 minutes. Set pan aside, covered. 2. Rub chop on both sides with sage and sprinkle with salt and pepper. Heat a large, cast-iron frying pan over medium-high heat, add 1 teaspoon oil and, when oil is hot, sear chops until golden on both sides, about five minutes total time. Transfer to a plate. 3. Wipe out pan, add remaining oil and, when hot, cook the onion and apples until lightly browned, about five minutes. Season with salt and pepper and stir in cider. 4. Return chops to the pan, cover and cook over low heat, turning once, until just cooked through, four to five minutes. Drain potatoes and garlic, reserving ¼ cup cooking water. Return potatoes to saucepan, add buttermilk and mash, adding the reserved cooking water as needed. 5. Season with salt and pepper and serve on four heated plates. Add one pork chop to each plate along with some of the onions and apples. Drizzle with pan juices and serve. serves 4 One reason why my food restrictions are not all that difficult . I mostly serve this with rice instead of potatoes, but once in a blue moon I will do the potatoes because I really like them |
