The seeds were beat in the blender with water and placed in a double boiler cooking pot, which prevents burning. Cooked for about an hour. The gruel will be stored in plastic containers in the refrigerator and freezer. Usually I add flax and nixtamalized corn but had none. A bowlful makes a fine breakfast. Posted Image |

That is a beauty of a double boiler. Seldom see them in Canada. I think the one you show is 8 quart about the right capacity. |

Yes, 8 quart stainless steel, bigger ones are usually aluminum. Here's a 20 quart for $56 from Webstaurant Store. Posted Image I am fond of double boil cooking, safe and easy. We are lucky in that along the Bowery there are dozens of restaurant suppliers, most of which will sell to the public with every conceivable kitchen item made. My eldest D has one that size. No idea where she got it. I love using it for breaking down a turkey into stock. She did work at a restaurant while studying so maybe they got it for her. I will try to remember to ask. |

At the present time it is too expensive to get anything shipped from the USA, which is always expensive, and the exchange rate exacerbates the situation. |

If you can live with aluminum, here's a choice from Webstaurant who DOES ship to Canada with a surcharge (I read some fine print.) The website has a CHAT button to find out the p's and q's. Price is a very good $35 USD. http://www.webstaurantstore.com/8-qt-aluminum-double-boiler/922ROYDB8.html I have a hybrid, stainless insert and aluminum bottom. The bottom has gone very black inside from oxide but no matter since it only holds boiling water. Ugly though. Some people would not relish an aluminum insert though. Just looked at this topic. I have 3 sizes that are stored away, my daughter bought them for me so I would cook for her. That'll teach her, I moved away with the pots. lol All I know is that they are very thick and very heavy and she complained about the cost. I think she got them at a restaurant supply company. |
