Weight Watcher Broccoli Salad!

Broccoli-Grape-Salad


Ingredients

4 cups small broccoli florets (about 1 1/2 pounds)
1 1/2 cups seedless green grapes, halved
1 cup chopped celery
1 cup raisins
1/4 cup salted sunflower seed kernels
1/3 cup light mayonnaise
1/4 cup plain fat-free yogurt
3 tablespoons sugar
1 tablespoon white vinegar

Preparation

Combine the first 5 ingredients in a large bowl.
Combine mayonnaise and remaining ingredients, stirring with a whisk.
Pour dressing over broccoli mixture, and toss well. Chill for 1 hour.

Yield: 8 servings (serving size: about 1 cup)

Raw Broccoli...A good substitute if you run out of Death Caps and Destroying Angels when assembling a salad for a Borgia family reunion.

Trotsky ~ Broccoli salad is delicious. I usually make the one with bacon, raisins, sunflower seeds, red onion etc., aka the fat version!

It sounds as if it would be too bitter/crunchy. Might just blanch the broccoli and use try that. Have some vegetarian friends coming to tea next Friday and am looking for recipes.

I very occasionally - long occasionallys - make radish salad. Slice lots very thin and make a vinaigrette of your choice. I haven't figured out how to thinly slice radishes fast.

It is very good.

Broccoli is not bitter Sooty. I often make broccoli salad and also include it in a vegetable plate with dip.

I like broccoli raw in salads but I'm not happy when I have a restaurant meal and it's served with rock hard barely dipped in hot water broccoli.

I find that kale with a dressing becomes more palatable when allowed to sit for 20 minutes or so. Perhaps broccoli is the same?

This the one I make too. You may find the sugar and raisins cut the bitterness. And you like bacon.

I soak the raisins for 3- 5 minutes in very hot water. Not sure if I need to; I was taught to do this to get the grit off them.
