I guess you could create a CSS class along the lines of this. I've never used IPB 2.3.x before, so I'll do my best.

If you want to change the whole table, I guess you might use this:

I would change the value in bold to whatever color you want. Rename the new CSS class to whatever you want and go from there. If this is wrong, forget that I posted. :P
